Chicken soup, chicken pox....


Everyone needs chicken soup in their lives.
It's restorative, comforting and mega-tasty.
Today my little man is down and out with the chicken pox.
He has had a bad run.
The soup I am making is from my favourite cookbook Fay's Family Food.
Yes, that's Fay Ripley of the Tesco ads fame (but don't hold that against her!)

All you need is.......
2 chicken legs, skin off
180g sweet potato, chopped
2 celery sticks, chopped
2 large carrots, chopped
1 onion, chopped
1 bay leaf
zest of 1 lemon
1 litre vegetable stock
a sprinkling of fresh chopped parsley

All you do is......
Put all ingredients except parsley into a large saucepan, bring to the boil and simmer for an hour with the lid on.
Take out the chicken legs, shred the chicken, discarding the bones and put back into the soup.
Serve with parsley scattered on top.
Season in your bowl.
